Pasta e fagioli soup
1 tbs olive oil. 1 small onion. 2 large celery stalks. saute until onions are clear. 1 can chicken broth. 1 can cannellini beans rinsed/drained. 1 can tomatoes. 2 garlic cloves. 1 tsp sugar. Salt and pepper to taste. 1/2 cup Ditalini (pasta). After the soup is good and cooked add 1 pkg of frozen chopped spinach. Heat until hot again. When Mom makes this she doubles everything so she has leftovers.
Beef Burgandy
2 lbs beef chunks cubed (stew meat). 2 tsp garlic buds. 1/2 cup burgundy wine (found in the grocery store by salad dressings) 2 cans of onion soup. Salt and pepper Mushrooms Put stew meat in a bag with flour and mix, then empty in the pot to brown in a small amount of oil. Add remaining ingredient and bake covered tightly at 350 degrees for 3 hours (Check after 2 hours) to make sure liquid isn't gone. Serve over rice or noodles.
Hot Dog Casserole
Cook noodles. In a frying pan put a little oil, heat about 2 tbs of oregano with a cut-up onion, saute till onions are clear. Add a small can of tomatoes, cut up hot dogs, add a can of cream of celery soup. Simmer for 10 minutes, add to the pot of drained noodles, and serve.
